Best way to capture as is processes

I have joined a new company and I am tasked with documenting the as is processes for ITSM, HRSD as we need to move from Servicenow Express to Enterprise

I have previously done ServiceNow Admin previously for another company and some story writing as a BA.

I am more than comfortable on navigating their current Servicenow but I can't find any good guide or template on documenting Servicenow As Is Processes. So currently I have been creating BPMs with roles and statuses, documenting steps on their processes and extracting and consolidating BRs, Notifications, UI Policies.Actions etc... in excel. However the company is keen for a full blown as is documentation in either confluence or word that covers everything.

Would love for someone on this forum to provide an example document of this or provide all the points to focus on gathering all the information.

Thank you, I took a look at e.g. Incident Management - Process Guide + Workshop. I feel like this layout would work but reword it the way they have in Servicenow express. Would this be a sufficient starting point for an as in document?
