According to this article:

There should be a Coral theme available, but it's not there. And I can't find any information on it.
It exists in the sys_ux_theme table, but it can't be selected under preferences. Nor is it selectable in Theme Builder.
I'm on Yokohama patch2 hotfix2

Hello! You are correct, the "Coral" theme is not available for use yet. I apologize for the confusing article, but you'll be able to use it when you upgrade to Zurich. 🙂

You need to set the Coral theme as the default. Go to the Theme Builder, search for the Coral theme, and apply it. Please note that you must be on the Zurich release.

If you're testing in non-production environments, you might experiment with Coral by referencing its sys_id via a URL hack—though this is undocumented and unsupported, and may lead to accessibility or UI inconsistencies. SNWizard shared this workaround:
Append the following to your UI Builder or workspace URL:
?themeId=<coral_sys_id>&themeVariantId=<variant_sys_id>
