There are two good places to start your learning journey. First, begin with the Flow Designer learning course along with ITSM implementation training. You can follow the official learning path here:

This course will give you a strong understanding of ITSM fundamentals and implementation.

Go to ServiceNow University and start with learning ITSM fundamentals On Demand. Then ITSM Implementation On Demand course. For your practice you can do ITSM Fundamentals and Implementation Simulator.
