How can we find out workflow to be used with how many Catalog Items?
Assignment Groups to be used for each Catalog Item or Record Producer?
How can we find out if complex workflow can be moved to Flow for certain Catalog Items?

Lot of customers are moving towards using flow designer
now whether you can use flow or workflow depends on the process
There could be some complexity involved but I believe those should be achievable using flow with some workaround

Navigate to "Maintain items" to see the catalog items list and add columns Workflow and/or Flow to the list view, and you will see what item has which record associated - either workflow or flow (cannot be both, one or another only).
A Workflow can be transferred to Flow but it will always require some extra efforts and manual intervention (testing as minimum hehe). Good practice is to create a general Flow with Subflows that can be related to other items, or you can always create a copy of existing flow, make some changes and associate it with another item as well.
You can have one (Work)Flow for 100+ items, or you can have one (Work)Flow for each items - it depends on the process needs and there is not any general response, each client has different requirements - assignments, reminders, approvals, auto-closure, etc...
