Interactive Date Filter

I've seen a few posts here requesting something similar but there appears to be a lot of people having issues getting it to work. 

I'm wanting an interactive filter where the user could adjust the between date ranges for a number of reports on a dashboard. Couldn't see anything OOTB that would suffice but hoping there is an optimal way to achieve this.

No, there is no OOTB solution to have a date range interactive filter. Only option is to follow the other posts that you have found describing this.
