How do I find the Data Owner of a Catalog Item?

I'm making some adjustments to a workflow. One of the changes I want to implement is sending a notification to the user for whom the ticket is opened for. The notification will be an email message that fires off as soon as the ticket opens, and will inform the user that the request is going to the data owner. I'm not confused as to the logic of how to implement this, but rather I don't know what the variable name for the data owner is.
Also, I'm considering sending the notification to the approver for the ticket as outlined below, what would the variable name for "Approver" be?

Hi there,
You are mentioning sending a notification, to who is opening the ticket. You title mentions Catalog Item, so I guess this is about Requested Items?
Sending the notification should be down through the normal Notifications (System Notification > Email > Notifications). No workflow involved (yes you can do it through workflow, though that's just nog best practice).
On Requested Item (and on Request), there is the Requested for field, containing who opened the ticket. Thats who you could send the Notification to.
