Assets in Product Catalog versus Service Catalog

I'll preface this by saying that I'm not an Asset Manager, but am instead a ServiceNow admin trying to understand the available solutions for our desktop team.

 

During our original deployment, we set up a product catalog with all of our consumables (mice, keyboards, the like) and pushed them to the Service Catalog that way. Now, we're looking to completely revamp almost all of our items, delete many others, and we're wanting to go the route of Catalog Builder to allow the team to build their own items via provided templates.

 

My question is, however, can/should Catalog Builder integrate in with Product Catalog and Models, or can we simply have a full catalog of items separate from any kind of asset or model? I'm trying to understand from a best practice perspective as we're ready to do things the right way and the best way.
