Encrypted Text field and Single Encryption Context

I'm evaluating encryption support using encryption contexts.  The use case is a table with a single encryption context.  I created a table extended from Task then created a field of type "Encrypted Text".  As the documentation states, an Encrypted Field Configuration record was automatically created.  However it was created with Method = Multiple Encryption Contexts.   It was my intent to for it to be a Single Encryption Context method.  I see no way to modify (nor delete) this Encrypted Field Configuration record.   There is no data in this table.

I can add an Encrypted Field Configuration record for an existing string type field for the same table and select Single Encryption context.  So an alternative is to create that new field as a String then apply encryption via Encrypted Field Configuration.

Two questions:

1. Is there a way to change the method from Multiple to Single Encryption Context on the Field Encryption Configuration record?

2. What is the difference between an Ecrypted Text field and a String field that is added to the Encrypted Field Configuration?

Did you ever get a response from this (possibly through a HI ticket)? We have run into the same issue in my company (in addition to some strange behavior that resulted from using encrypted text).

 

We found that using a regular string field + encryption context allowed us to select a Single Encryption Context (and fixed the strange behavior we were seeing) but I'm a bit concerned that this approach might be less secure in some way. 

I never learned anything more about this.   My organization hasn't moved forward with encryption so I don't have any practical experience to share with you.   But I would appreciate hearing about your experience.   Best wishes!
