Leveraging the new Project Playbooks

Hi.

Can anyone advise how I leverage the new playbooks in Project Management?

I've made sure my PDI has the Project Workspace, PPM Standard, and Playbook Experience plugins updated to the December store release.  I can also see the two Playbooks in the Playbook Experience section. 

I'm just trying to work out how to get a Project to display and follow the playbook.
