I've installed the core SPM in my dev instance, but when I try to create a new project through Project Workspace, the template field is empty.
Do you know if anything else needs to be installed?

The Project templates are empty because demo data was not loaded when you installed the plugin.
The OOB project templates are:
To get these, navigate to plugins open the already-installed SPM plugins and click on the 'Load Demo Data' related link as below:
The second way is to manually create Project Templates.

Hi @zeglasp ,
It shows empty because you don't have any templates, you will need to create Templates first.
Navigate to Project Administration> Settings> Templates-Project:
- Mark as New
- Bookmark
- Subscribe
- Mute
- Subscribe to RSS Feed
