I'm trying to move my work into the new project workspace, but one of the things that drives me absolutely bonkers is the lack of ability to filter the list of projects under my projects and all projects. Sure, you can search or use some sorting methods, but I really have no desire to see the stuff that is complete on the regular. Is there a way to configure a filter for the view of the projects?

You are absolutely correct... Filter capability is useful for a better user experience.
Good news is that this will be available in New project Workspace starting Xanadu release which is planned to be GA in current quarter.
I have created a video to showcase the same.

A recent update to the plugin added the filtering ability to Washington. That is awesome; I appreciate this and the other enhancements that have been added.
Something else that I noticed different from the classic to the new workspace is that project tasks have the planned effort in the classic view when looking at the tasks in the flyout pane via the planning console view, but the same view in the new workspace does not have the field. However, if I click Full details in the lower part of the pane I get a view that has the planned effort showing. I also cannot add planned effort in the planning view as an additional column.

Hello @Namita Mishra , I would like to ask, if there is a way for the users to not only filter but also change the order of the columns or have the possibility to add columns that are not in the default list view, same way as was in the classic list, this seems to me currently a limitation not be able to add columns.

Not sure if this query still exist but just now saw this one....
The answer is yes for both ...
In the new project workspace, you can change the order of the column. Just drag & drop the column to left or right by using the reorder from the column heading - as shown in the screenshot
2) Add the columns in the list view which are not already part of column configuration list. Please refer this doc. I haven't tried the steps but it should work.
