Our definition of done in the user stories is the Acceptance Criteria.
Our definition of done in the Enhancement and Defect record is in the description as to what the end goal should be to consider it complete.
If you are at the project level, I recommend that you use the description field as well. We always attach our SOW to the project.
Too many times when doing Agile, I see people get hung up on them wanting a separate field for the definition of done. But you don't need it. Especially for User Stories. That is the definition of what the Acceptance Criteria is about.
