Is there a way to achieve this other than customizing the widget?

not possible without customizing the OOTB widget by cloning it

If it is workspace, You can refer this: Hide Price, Recurring Price and Quantity 

If it is ESC portal order guide, Clone the OOB widget. Without customization , it is not possible.

• Service Catalog->Catalog Definitions->Maintain Cart Layouts
• Once there, navigate to Target type: Browser Widget
• Then choose Item Ordering Widget.
• Uncheck the Delivery Time , Price,Quantity,Total checkbox.

It would be great if this method worked, but it was ineffective.
This is intended for use in an order guide on an employee portal.
