do you mean that AI would be used in a live course or that a live course focused on AI will happen?

There are several official SN events dedicated to Now Assist here and there.

ServiceNow University is an AI-powered platform designed for career growth, offering a variety of structured learning paths.

 " The platform offers free, gamified, and AI-personalized learning, with bite-sized courses, digital credentials, and India-focused career pathways such as software development, data engineering, and security operations."  //Refer: ServiceNow launches AI skills program in India, aims to train one million by 2027 

If your question is about whether live sessions could be conducted by AI in the future, my view is that it is definitely possible. However, there are still a few challenges, such as cost considerations and managing interactive elements like Q&A sessions. That said, given the current direction of technology, this is something we can realistically expect.
