Outbound Email | How to search node logs for possible SMTP issues?

We have configured our instances to use our company's SMTP server for outbound emails. This is done primarily so our on-prem solutions for PHI detection are leveraged. This works fine. ...of course when it doesn't. 🙂 A couple of times now, an outbound email will get "stuck" in endless retry mode - about every minute. Oddly, the recipient(s) do get an email yet somehow ServiceNow is still trying or things it needs to keep trying. Our only recourse has been to delete the offending outbound email. As admins, we only come to know when an end-user sends us an email saying... hey, why am I getting this some many times. Again, most of the time, we never have an issue.
Am thinking we need to troubleshoot by searching node logs. Node logs are quite daunting. It seems like trying to find a needle in a haystack. Are there any suggestions / pointers for searching node logs for successful / unsuccessful SMTP transactions?
