I've become more and more used to Next Experience/Polaris, but I still can't get over the fact that the Watch field functionallity is gone here - extremely frustrating.
The solution to this is to setup UI16 for an admin user and Impersonate that user, to watch a field.
But to summarize your post in short:
- sys_user_preference.LIST
- Find and open "glide.ui.polaris.use"
- Insert and Stay
- Uncheck "System" and select desired "User"
- Set Value to "false"
