The Zurich Release is great, however people with the ITIL role are not able to choose and Switch back the Dashboards to the Core UI. I would like to know how can I provide option to the ITIL users in our organization to switch back if required giving them the option

Unfortunately, there is no way to revert at this point, and doing so is not recommended by ServiceNow. The core reporting and dashboards are now on the path to decommissioning and are no longer available to any users.
It would be better to educate your users on the new platform, provide guidance and support, and encourage them to start using it. I understand it's not an easy transition, but every change begins with a small step.
