that's not easy to suggest you anything while not knowing much about you nor your scope, expertise or interests and you left the description empty which is a shame but maybe you want to add more details below.
What you can do for example is a time/day calculator - a form with two fields and a checkbox, checkbox would be called Today?, so if you check it then one of the field is populated with today's date and the other field will be manual input that calculates how many days ago or to go from/before today...
I did something similar for my kids to calculate how many days left until they have birthday, school trip, football match, swimming lesson ... :))
That is quite complex to learn front end part (portal, form, categorisation, making the input mandatory, catalog client script) as well as backend to execute your script and GlideDate(Time) APIs.
Another ideas can be reminders/calendar bookings, event reminders, ... this is one of the very few topics where I can recommend you using AI which I would discourage you otherwise but to discuss ideas and things to develop, it is great. Give it some thoughts and discuss into details what can be done but then do it yourself without it ;))
