I have checked in teams record card format, previous priority for incident is not available.

Even if it is not possible to add it on card can it be done in message part?

I don't think you can access the previous value.

Did you check any OOTB script which does this?

Also if you know the record sysId, you can query sys_audit table with this INC sysId and get the previous priority field value.
