I would kindly like to ask about the possibility of registering changes to the Assigned to (assigned_to) field in the Activities field. I tried adding the field to the filter and also tried, through a dictionary override, to set audits to true.
Could you please assist me with this requirement?

Instead of trying to make a specific field auditable make the table auditable. To do this right click on the form or on the list a records and choose configured > Dictionary. Then sort by column, you should see a record where the table is your table and the column is blank and type is collection. Set audit to true on this records. Example screenshot below from the change_request table.
