Is it possible to link two ServiceNow instances using the Zero Copy Connector, designating one as the source of truth for data while the other instance accesses this data solely for reporting purposes?

Yes, it's possible, but not yet.
The connector for Remote Servicenow is in the roadmap and will be available soon
