when it comes to workflow it's stored in different tables
Workflow tables -> everything shared here
for flow check the tables in sys_db_object table by searching as this

Workflow is becoming outdated, so it's better to learn Flow Designer only.

If you are starting to learn about workflow, stop. Now. Don't proceed. Workflow is deprecated and ServiceNow is no longer supporting/shipping it with new instances. It would be a waste of time. Use Flow Designer.
