There will be no impact, as it will enhance your experience and provide a good interface.

What kind of impact are you afraid of?

As with any plugin/new functionality: install it on non-prod first, check it out and if it works for you, install it on production.

Impact such as:
(a) It should not change the way of creating the service/service offering through standard UI.
   We know that, after service builder, we can also create the service /service offering through service builder.

You can still do it in the 'old' way. Question is why you would want to? If you want to use the builder, start using the builder, but most effect will be gained from having everyone use it and not have the 'but I don't want to change my way of working' people still do it the same.
