New to ServiceNow and on the latest Vancouver release, however noticed quite a lot of SNMP OID Classification models for a range of vendors missing.
Are we really expected to just add all the missing models we have in our environment and there is no lists updated by ServiceNow anywhere?

Yes, you have to add the missing OIDs if you want the devices the be classified successfully. I have noticed that ServiceNow does update the table via release upgrades/patches and the Discovery and Service mapping Patterns plugin but I don't know the update frequency.
If you view the SNMP OID Classifications [discovery_snmp_oid] table and add the column named "Application", you should be able to determine if it was from a release or plugin.
Here is a related question with a response from @doug_schulze explaining the issues of keeping the OID table up to date.
