the SN University's trainings aren't downloadable and neither in pdf format... Also I haven't found anything explicitly dedicated to walk-up experience. That might be a part of some ITSM simulators or implementation courses, but not standalone class...
If you want a downloadable PDF, then I would recommend to search the Best Practice Library (formerly known as Now Create)
These PDFs might be too technical... but I don't think it's possible to meet your requirements

Training for walk-up support usually works best when it focuses on real scenarios rather than only system navigation. I’ve seen teams benefit from practicing how to quickly log requests, guide users through simple fixes, and decide when something needs escalation. That kind of hands-on practice tends to prepare people much better for the pace of walk-up support.
