I would like to know what is the purpose of "Process Step" under approval of Change request?

Depending on your organization's change management policy and the complexity of the change, the ServiceNow approval process for change requests may require several stages or processes. Controlling and managing the approval flow for changes can be done using the "Process Step" under the approval of change requests.
The approval workflow for a change request can be organised using process steps, which serves this purpose. It is possible for different steps to correspond to distinct approval phases or approver groups.
Sequential or Parallel Approvals: Depending on how they are set up, process steps can be made to request approvals from several approvers simultaneously (parallel) or in a certain order (sequential).
Oversee Approval Stages: Various process steps can correspond to different phases of the modification. I hope this answers.
