Record Producer - best way to allow multiple selections from a long list

Hello,
I am looking for the best practice approach on Service Management Request. I'm not sure if the best way is to use a Service Catalog or if there is another way.
Procurement: Requesters should be able to fill out a Record Producer to put in a request. In that RP, they need to be able to fill out a matrix of data for random items (not in a catalog). Each item on the list should create an Item record that is associated with the Procurement Request (links to Items in Related List). What is the best way to accomplish this?
Suggestions would be greatly appreciated. Good ones get Liked and marked as Correct. 🙂

The question wasn't a hint? 😉
This would be a Record Producer...on which a requester would enter items on a list that would create Request Items.

I've worked out something that suits my needs.
I'll add a Strong Field question to the RP followed by appropriate dependent follow-up questions (that live on the same table being referenced) - then I add another identical line that along with a Catalog UI Policy to hide the fields unless the Ref question above is populated.
Then rinse, wash, repeat about 18 times. Reproduce these fields and functionality on the Form, then set the auto-generation of child tasks based on selections.
That is my approach and what I am building. I'm still open to other thoughts on a better way to do this.
