About export set and update set

Hello,
I your views.
I set up an Export set, I have that in an Update set. But as I'm exporting to a MID server.
In the export set I have the export target which is pointing to DEV MID server.
I want to edit the Update set xml code of the export target to change the MID sys_id to the STG MID server ID and commit to STG.
Is it recommended to change the Update set XML code?

you should have a manual activity after migrating the update set in test instance.
You should select correct mid server which is UP and running after migration.
Don't make any changes to XML

I wonder what will happen if I commit an update set with MID sys_id that does not exist in STG.
Will SNOW create that MID with the Sys_id?
What will happen if the export Target record created points to a MID that does not exist?

it will throw an error and you should accept the customer update. It won't create mid server on it's own.
Later as part of manual activity you update the mid server field.
Whatever errors come you can accept those if those are related to mid sever
