Best Practice for what Notifications to be enabled

We went live with ServiceNow recently and would like to know what all notifications have you enabled or you think should be enabled for Incidents and RITMs and SCTASK.
We are gettign feedback that people are getting flooded with servicenow notificatios and I would like to trim some of them and would like to know from industry experts which are absolute essential notifications you would recommend ?
for example notification when RITM is assigned to a user vs to a group , same with SCtask .

You can go to the Notification tables, group by table, and then check where emails are going and under what conditions.

There should be already OOTB notifications on those tables.
You can create/customize those as per your customer's requirement.

there is no universal answer, each client/audience require different notifications... you can review and adjust conditions when the notifications are sent.
Eventually, the users can adjust it in their preferences:
