Our instance has some stock portal definitions in it, like the "csm" portal, and I don't want customers to be able to use them. Is there a way to make them inaccessible without having to delete the portal definitions?

Hi,
Try changing the homepage to "404" page to bring them to the error page when accessing the portal. Don't forget to remove the SP Header menu value from main menu field also to remove access to headers. Change the suffix also in case users. have bookmarked the portal
