Can we change the statement structure of activity section? If yes, from where we can configure it.

Such as 'State Changed from Validate To Fieldwork' rather than existing one 'Fieldwork was Validate'.

As discussed, it is not do able, and not recommended, It is by design only. and what value this change will bring is important here.

No, we can't. And even if we could, don't touch things that are in the core of the system like these. You will be creating huge technical debt.
