Change catalog wizard on catalog builder

Hello Everyone,

this post is a repost from a previous one that I posted on the architect forum.

I try to use the catalog builder to let the service owners of my company to create their own items.

But I struggle with one thing : the catalog wizard linked to the catalog builder app is protected by policy and I cannot edit it (for exemple I would like to remove the "Access" wizard step because we don't want to let them either manage or being aware of it.)

So I tried to create one from zero and fill it with the wizard steps and wizard sections that I wanted, but I can't find anywhere where I can link it to the catalog builder application and use it when I create my catalog items templates and catalog items.
