I am using San Diego early access for my PDI and I am using Next experience unified UI. which is kinda good mostly. But is there any option to change the UI colours for Next experience dark(attached) or light theme ?

You can create your own theme. The new theme extends the polaris theme. And you will be able to adjust any colours you want.
Procedure
- Navigate to All > Now Experience Framework > Theme Management > Themes.
- Select New to create a theme record.
- Enter a name and a description.
- Select the Additional actions icon (
) and select Save.

Note:
The UX Style -> Colors record contains the colours for the theme. Now I dont think you can edit the OOTB polaris theme colours as the record is private. So the best we can do is to create our own.
Open the Polaris theme and open the colors record.
The sys_ux_style record contains all the colours for the theme:
So as part of creating your theme, copy this colour record/style sheet and change the values you want to change.
