What do I need to do to get ServiceNow back up and running if there is a disaster at our location that requires us to move to a backup site?

You'd probably be best served by contacting HI support (hi.service-now.com). They'll run through all of the specifics and scenarios surrounding what would happen if you had to recover an instance or needed to failover to a backup site.
If you really want an answer from the community though, my first question is are you hosting ServiceNow on prem or in the cloud?

Are you using an on-premise install? The beauty of ServiceNow's default cloud delivery model is not having to worry about disaster recovery plans. The tool works just as well from your basement at home as it does from your office at work.
If you're on-premise, you'll definitely need a plan.

We are in the cloud and authenticate via Active Directory, so my concern is if we have to rebuild A/D, how will I be able to access SN to update the LDAP (A/D) server name ip address.

Ah, in that case you'll want to learn about side door. Here's a relevant wiki link that takes you right to the subsection you need.
External Authentication (Single Sign-On - SSO) - ServiceNow Wiki
And now that I think of it, you'll want to think about midservers if you're doing any kind of discover operations. You may need to redeploy those in a disaster.
And if you have any integrations with non-SN systems, you'll need to think about that.
