How to create email processing table which will have same attributes as sys_email table. the purpose of table is to store all incoming email and ones that needs to be send out from servicenow.

You can create filters on sys_email table on basis of type, creating the same OOB table is not necessary, it will be a lot of effort in terms of scripting and creating table/fields. 

Also, since this table has a lot of OOB functionalities, it will be hard to mimic the same in custom table.
