Hide an Option on a drop down list on a form field

I created a field on a form and the type is drop down, I created a catalog UI policy to hide one of the field options "Director and Above".  However, the option still shows on the drop down list.  The field where I made the change is a part of a variable set that is shared by other catalog items so when I created the UI policy I made it in the catalog item, not the variable set.  Do you know why the "Director and Above" option still show? Here is the UI policy:

There might be a missing screenshot here. How did you actually go about hiding the option? Are you using the script section of the UI Policy Action? If so, what's the script?

 as @Prinssi also commented, did you utilize a UI policy action or a scripted UI policy to hide the item? Can you please share the missing snip?
