Hide item from choose options order guide tab

Hi,

I'm looking to find a way to hide specific items from appearing on the 'choose options' second order guide wizard page. The items should still be included in the order guide but just not visible to the user. I've tried to achieve this by adjusting the client script in the vanilla order guide widget but whilst I'm able to manipulate items onclick I'm not able to hide them from the DOM onload. 

How should I go about achieving this?

Are you talking about a wizard or an order guide?

If it is an Order Guide you should be able to use a UI Policy to hide things.  If not you need to post a screen shot so we have a better idea of what you are talking about.
