How does this entity value gets fetched in the assessment ui page?

Hi Experts,

I want to know how the highlighted value is populated in the UI page of the assessment record. 

I wish to populate more information of the entity record for users but oob only this name is coming up. 

Please respond asap if you have any info, Thank you sm
