How to add or remove field for Preview this record button?

Go to the URL below and right click on the form and select configure layout like you normally would, that will change the form layout for the popup view.

<your instance name>.service-now.com/<table name>.do?sysparm_view=sys_popup

I tried that link  (....service-now.com/sn_customerservice_case.do?sysparm_view=sys_popup), but I landed here:

On form design, "Pop-up" is not one of the views.

Check in System UI > Views and see if there is a record for sys_popup,case. If there isn't try adding one
