How to Change the brand and theme settings in WORKSPACE experience?

Hi, I am trying to change the theme for workspace experience. But I am unable to change it for the WORKSPACE experience. It just has one theme - Polaris, but I want to change the workspace experience to the other themes. When I tried to do it says- 'Polaris is the default theme for your instance'. I don't see any drop-down option under the Branding and theming section. Please find the attached Screenshot below:

Any help would be appreciated. Thanks in advance.

Doubt: Can we create a theme for custom application specifically so that it is only applied to my application and not to all experiences!

Thank You for your reply. I already tried the above method but still no help. I created the theme, but I am not able to change it from the UI builder Experience (Workspace) settings.

@Maik Skoddow - could you please confirm if we can have unique experiences for workspaces confined to different applications in domain separated instances.

Normally domain separated instances may hold multiple clients from multiple industries - wanted to see if we can theme the workspace unique to each industry.

Example - Coffee Shop has a brown coffee bean theme for the workspace and Airlines has some bright sky blue as a theme for the workspace

Anybody sorted this out? It looks that I'm unable to change theme for SOW and CSM/FSM workspace from default Polaris. I'm able to do some adjustments in Polaris theme but requirements is to have different theme for SOW and different for CSM/FSM.
