How to change the items displayed in the @ mention field ?
I think that when a user is mentioned, a popup displays the user's face, name, and email address. Is there a way to configure the popup to display additional information, such as custom fields?

I don't think you can add any other field there as the logic comes from platform level.

Unfortunately, this has been discussed a few times on the Community and each time the consensus is that there isn't a true "out of the box" way to do this.
There is an official Problem logged related to this which has been open for 7 years (PRB727205) -- but the ServiceNow development team has continiously said they will not be building out this functionality.
In a few of the other Community posts, people do share some creative "workarounds" however ultimately the mentions are pulling the display value from sys_user.
