Hi we have a requirement where user wants to enter Priority field manually for incidents. How can we do this?

@vidhya_mouli Navigate to System Policy -> Rules -> Priority Lookup Rules and inactivate it.
Note: You might need to clear the priority field using onchange client script script.

It is not a best practice, that we allow user to enter the priority manually. For a user every incident is P1 and that will directly hit your SLA and operation and i.e. reason we have look up here. YOu can modify the look up instead of disable.
