How to hold/stop an Activity set from triggering in a Lifecycle Event

When a flow has been configured according to client requirements- Pre-hire, Pre Day 1, Day 1, Day 7, Day 30 etc,
How can we hold/stop the trigger of Day 1 Activity set incase a New hire that is expected to resume on Day 1 does not resume again( possibly rescheduled resumption date for the following week). Is there a process-dependent solution to this? New hire has already completed Pre Hire and Pre Day 1 Activity set activities.

You will need to use rescind process for this requirement of yours.
The rescind process enables you to cancel and revert work done in a lifecycle event case. For example, if a new hire decides not to join the company or a job offer is revoked, you can revert work done in the onboarding case.
Procedure
- Enable the rescind activity set.
- Navigate to Lifecycle Events > Administration > Manage Lifecycle Events, and open a lifecycle event record.
- Click the Activity Sets tab.
- Click Enable Rescind.
- Add one or more rescind activities.
- Click Add to add a rescind activity to the rescind activity set.
- Fill in the fields on the form.
Field Description Title Name of the rescind activity. Description Description of the rescind activity. Activity to rescind Name of the activity to rescind. You can select any activity that is associated with the same lifecycle event type, with the exception of activity containers (you can select member activities) and other rescind activities. Activity type Activity type of the rescind activity. Select one of the following activity types: - Approval
- Employee activity
- Fulfiller activity
- Notification
- Flow
- Content
- Activity container
Note: For this activity type, there is no Activity to rescind field at the container level. When configuring the rescind member activities, you can select the corresponding activity to rescind at the member activity level.
Active Option to activate the rescind activity for use. Owning group Owning group that the rescind activity is associated with. Audience Defines whether the activity should trigger for the lifecycle event case. You can apply one or more audience records. The subject person of the lifecycle event case must meet the conditions or criteria of all audience records for the activity to trigger in the case. If no audience record is selected, then the activity will always trigger for the case. Important:The rescind activity automatically inherits the audience of the underlying activity to rescind. If you clear or update the activity to rescind, the audience is also automatically cleared or updated. - Repeat the process as needed.

In this case we do not want to entirely rescind the process. The new hire rescheduled its resumption date to the following week. All the other activities i.e. Pre Hire and Pre- Day 1 have been completed prior and are still deemed valid. How do we hold the Lifecycle Event to trigger on the new resumption date(the new Day 1) without needing to rescind prior completed activities.

Though, I am too late to respond here, but still sharing my two cents as it could be helpful for someone else who is facing the same scenario.
For the day one, you can configure the Day 1 activity set to trigger on a specific date by setting the trigger type to a specific date.
Configure your activity set on the basis of the following screenshot.
Here the trigger type is date, trigger table is HR Lifecycle events case and the trigger field is subject person job start date.
By updating the values in Job start date on HR Profile you can control when the Day 1 activity set should be triggered for a new hire.
