Thanks for the Doc link.

By following the document, the version number is increasing here, can't we roll back without increasing version number ?

Unfortunately, not.
You will need to re-publish again, creating a new version of the record.
Let me know if you found any other way to do it.

Try opening the record of the last published version of the article you want to restore. Depending on your access level, you'll see the "Make this Current" button on the top right of the page record. That will generate a draft version that you can later publish.
