How to set catalog variable as Non-Global variable

I want to change a bunch of my catalog variables (assigned to specific items) so that they are non-global and I can use the workflow task variable slushbucket to make them visible or not.

The problem is that the application scope is read only (Global) for all of my variables. What do I need to do to create non-global variables or change my existing variable sto non-global?

In left NAV, go to 'All variables'.  

Modify the list view to include 'global' field.  

Select the appropriate variables and Update the 'global' field to false.
