While there isn't a technical or material impact as such, this is not recommended.
Activity filter is generally viewed and seen as an audit trail for a record. Editing or deleting entries here (even if to just remove typos or errors) immediately removes the validity of the possibility of using the feature as an audit trail.
It is also not a relatively straight forward process to amend the journal table, while I've seen some customer customization that handle it well, I have also seen more not work as intended and causing significant issues.

We are being asked to delete Personal Information data that has been accidently or incorrectly entered in the Audit Log. As such it is a legal requirement to delete the entry. Do you see any technical reason or difficulties associated with deleting this data from these 3 tables sys_audit, sys_history_line, and sys_journal_field?

Be certain of your WHY. I wouldn't alter OOB behavior on this unless a legal or compliance team told me I had to.
