List collector variable field to show up only email address from 'sys_user' table

Hi Team,

On a catalog item I am having a List collector variable field with glide_list= true.

Is there a way I can show only Email ids from sys_user table without manipulating the Display value on table level since it has global impact any ideas are appreciated

Note: I tried handling them using variable attributes it works on Service portal which shows (name, email address) but on platform side it is displaying just the user's name.
