Using GitBook for API documentation right now, but it’s a pain keeping our OpenAPI spec in sync. We’re basically writing things twice. Are there alternatives that treat the spec as the source of truth and let us generate docs directly from it — ideally with versioning, markdown support, and CI deploys?

I have been using Confluence from Atlassian since 2008 and cannot imagine documenting in another tool. For everything which is not available OOTB there is a large plugin store with free and paid plugins that can add all the required features you need. For example, "Git for Confluence", which is free for up to 10 users.
And as an individual, you can use Confluence for free - similar to the PDIs in ServiceNow.
