Omit preceding text in record producer variable

I have a business requirement for a record producer variable to be modified on the record producer page.

The requirement is to remove any preceding text before the actual category name IE:
IT - AV

IT - Security

I need to omit the 'IT - ' when the record producer is loaded. Any help is appreciated!

@Gangadhar Ravi- Lookup select box is the variable type.

@glawson_pgatss I don't think you can write script. One option is you can create new field on that lookup table and populate new value into that and use that in your variable.
