On the catalog task form I would like some fields/variables to show on the tasks.

On the catalog task, I have created a new section called Parent REQ/RITM information.  On the RITM there is a variable called Contact Phone Number.  How can I add this field to the new section I created?  When I go to configure form layout for the sctask there is no option to choose the contact phone number...  I expanded the Request Item, then Variables but it is not showing..

In your workflow, on the Catalog Task activity, scroll to the bottom of the form and that's where you can add the variables. You can have different variables per task:

My workflow uses the Parallel Flow Launcher that calls a sub workflow to create all the tasks....It does not use the Catalog task it uses the Create Task.

You should consider updating your workflow activity so you're using the correct one and able to get variables.

But when I use the Catalog task in the subworkflow all of the tasks are not created when they select multiple selections

ok but that doesn't make sense. Without seeing your workflows and all, hard to troubleshoot.
